1 serving

Time: ~5 min

Ingredients

  • Peanut Butter32 g
  • Soy Sauce15 g
  • Lime Juice15 g
  • Maple Syrup7 g
  • Filtered Water, added gradually15–30 g
  • Garlic, fresh grated optional3 g
  • Crushed Red Pepper Flakes optionalabout 0.5 g

Instructions

  1. Whisk Ingredients

Whisk the 32 g peanut butter, 15 g soy sauce, 15 g lime juice, 7 g maple syrup or honey, and optional garlic and chili flakes.

  2. Adjust Consistency

Add the warm water a little at a time, whisking after each addition, until the sauce is smooth and thick but pourable. Use less water for a clingy glaze and more for a drizzle.

  3. Prepare Tofu

Once the tofu is fully browned and steam-finished, turn off the heat.

  4. Coat Tofu

Toss the hot tofu with just enough sauce to coat it, or drizzle the sauce over the tofu after plating for maximum crispness.

Note

No cornstarch slurry is needed. The peanut butter naturally thickens the sauce. This sauce replaces the sticky garlic-soy glaze rather than being added on top of it.
