Instructions
Cook the Rice
Cook the rice in the rice cooker. For the best fried-rice texture, cook it earlier, cool it promptly and refrigerate it; otherwise spread freshly cooked rice on a tray for 10 minutes so excess steam can escape.
Cook the Eggs
Heat half the oil in a large pan over medium-high heat. Add the eggs, stir until just set, then transfer them to a plate.
Brown the Beef
Add the remaining oil and the beef. Cook for 5 minutes, breaking it into small pieces, until browned.
Cook the Vegetables
Add the onion and carrot. Cook for 3 minutes, then add the garlic and cook for 30 seconds.
Stir-fry the Rice
Add the peas and 900 g of the cooked rice. Stir-fry for 3 to 4 minutes until hot.
Combine and Serve
Stir in the soy sauce, brown sugar, sesame oil and cooked egg. Toss for 1 minute, until the sugar has dissolved, and serve with lime. Put chilli sauce on the table for adults rather than adding it to the pan.
Leftover Rice
Cool unused rice quickly, refrigerate within 1 hour and use within 1 day. Reheat only once, until steaming hot.
