Ingredients

  • Pizza Dough, at room temperature1 lb
  • Olive Oil2 tbsp
  • Marinara Sauce¾ cup
  • Mozzarella, shredded8 oz
  • Parmesan, grated optional¼ cup
  • Basil, leaves, torn optional¼ cup

Instructions

  1. Rest the Dough

Let the pizza dough sit at room temperature until relaxed and easy to stretch, about 1 hour.

  2. Press into the Skillet

Coat a 10 to 12 inch cast iron skillet with the olive oil. Press and stretch the dough to the edges; if it springs back, let it rest 15 minutes and press again. Meanwhile, preheat the oven to 500F (260C).

  3. Top the Pizza

Spread the marinara over the dough, then scatter the mozzarella all the way to the edge so it crisps against the pan. Sprinkle with the Parmesan, if using.

  4. Start on the Stovetop

Set the skillet over medium-high heat for 2 to 3 minutes to jump-start a crisp bottom crust.

  5. Bake

Transfer to the oven and bake 12 to 15 minutes, until the crust is deep golden and the cheese is blistered.

  6. Rest and Serve

Rest 5 minutes in the pan, scatter with basil, if using, then slide out, slice, and serve.
