Instructions
Roast vegetables
Preheat the oven to 425°F. Toss the cauliflower and potatoes with olive oil, a pinch of taco seasoning, and a little minced chipotle in adobo if you want heat. Roast until browned and tender, about 25 minutes.
Make pickled onions
Quick-pickle the sliced red onion with lime juice or vinegar, a pinch of salt, and a little sugar while the vegetables roast.
Cook beef
Brown the ground beef in a skillet over medium-high heat, breaking it up. Add taco seasoning, a splash of water, and chipotle in adobo to taste, then simmer briefly.
Cook plant-based meat
Cook the plant-based ground meat in a separate skillet the same way, keeping it separate for the non-meat eaters.
Warm tortillas
Warm the flour tortillas and any corn tortillas in a dry skillet or wrapped in foil in the oven.
Assemble tacos
Put everything out family-style: beef, plant-based filling, roasted cauliflower and potatoes, avocado, jalapeños, pepitas, pickled red onions, lime, cilantro, and optional cheese. Everyone builds their own tacos.
