Instructions

  1. Cook the Potatoes

Put the potatoes in a saucepan, cover with cold water and add 1/2 tsp salt. Bring to a boil and simmer for 12 to 15 minutes, until tender.

  2. Brown the Beef

Meanwhile, heat the oil in a large oven-safe frying pan over high heat. Brown the beef for 5 minutes, breaking it up.

  3. Cook Vegetables

Add the onion and carrots and cook for 4 minutes. Stir in the tomato purée, Worcestershire sauce and thyme for 30 seconds.

  4. Simmer the Mixture

Add the stock or water and remaining 1/2 tsp salt. Simmer for 5 minutes. Add the peas and cornflour mixture; simmer for 2 minutes until lightly thickened.

  5. Mash the Potatoes

Drain the potatoes well, return them to the saucepan and mash with the butter and milk.

  6. Assemble and Grill

Spoon the mash over the beef, rough up the surface and scatter over the cheddar. Grill/broil for 3 to 5 minutes until bubbling. If your pan is not oven-safe, omit the grill, scatter the cheese over the hot mash and cover for 2 minutes to melt it.
